I am fairly new to Sous Vide cooking and have found this book quite useful in learning technique and suggesting recipes which I want to finish on the grill. The pork and chicken recipes I have tried were well written and tasty. Next I plan to try the tougher cuts of beef like short ribs and brisket which I have avoided in the past.

The paperback version does not list all recipes in the Table of Contents nor does it have an index. I bought the iBook version as well so I can easily search by cut of meat and print out a chosen recipe for use in the kitchen. A digital version of a cookbook is handy when grocery shopping.

A good companion is the PolyScience Sous Vide Toolbox iPhone App. Takes all the quess work out of time and temperature. Just dial in product, thickness and any other pertinent details and you have your settings at your fingertips.

Just Great!
A horrible book. Nothing inside this book ISN"T available online. I use sous vide constantly and with a suggestion to use 131 as the main medium rare is never going to work. Do 134-136 and cool, then sear or grill.
There are no pictures of any recipes in this book.
General grilling stock pictures were used, so this book is incredibly NOT useful.
I can't wait to try the recipes contained within the pages of the book. There are so many different things to grill. Great Job!
I do not know anything about this type of cooking. This is a great guide more for the style and times than the recipes themselves.
It has information for getting started and simple recipes that are easy to follow.
Excellent information Easy to follow great ideas
Very good suggestions on how to add smoke the Sous Vide cooking. I smoked a 8 pound brisket, seasoned with Obie-Cue's Texas Brisket Rub and Slap Ya Mama Cajun Seasoning, at 250 degrees for 1 hour on my Kamado, and then cooked it at 163 degrees with my Sansaire immersion cooker for 24 hours. Both family and friends claim it was the best brisket that they ever had.
